Ingredients: 100g Protein Matrix+ Vanilla; 80g Desiccated coconut; 70g Light cream cheese; 10g Coconut oil, melted; 20g Sweetener; Juice & finely grated rind of a small lemon; Splash of vanilla; 20g Desiccated coconut

Blitz the ball ingredients in a food processor until combined.

Put the extra desiccated coconut into a small bowl.

Roll the ball mixture into 8 equal-sized balls.

Roll each ball in the desiccated coconut until evenly coated. Place each ball onto a lined tray to set in the fridge. Can be kept in the fridge or freezer.
